Dessert in a cup, combining a mixture of an oozy caramel filling, an oaty peanut butter coating and a chocolate shell topping, finished off with a tasty protein ball. What’s not to like? I can confirm these delicious goodies make the perfect after lunch/dinner snack or pudding – it’s hard not to eat more than one!

Ingredients:

For the cups –

  • 100g oats
  • 2 tablespoons nut butter
  • 2 tablespoons maple syrup
  • 2 tablespoons oat milk

For the filling –

  • 1 x tub caramel protein pudding

For the chocolate topping –

  • 1 tablespoon coconut oil
  • 60g dark chocolate
  • 3 x Peanut Butter Protein Balls, cut in half
  • 3 x Choc Muffin Protein Balls, cut in half
  • Flaked almonds, to scatter over

Make them!

  1. Mix together the oats, nut butter, syrup and milk until combined. Spoon between a 6-hole silicone muffin tin and press up the sides and on the bottom.
  2. Divide the protein pudding between each one to fill to nearly the top.
  3. Melt the coconut oil and chocolate and spoon over each one to cover. Arrange half a protein ball in the middle of each and sprinkle over flaked almonds.
  4. Chill in the fridge for at least 2 hours to set – then enjoy!
