High Protein Zucchini & Corn Patty is very healthy breakfast for everyone. These patties when clubbed with soy granules or a high protein millet, makes them perfect to serve it.
Ingredients of Zucchini & Corn Patty
- 4 cups shredded zucchini
- 1½ cups corn kernels
- ¾ cup chopped green onions
- 3 garlic cloves, minced
- 1¼ cup chickpea flour
- 2 teaspoons cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt & pepper
- high heat oil
- nacho cashew cream
- black beans, salsa and avocado
How to Make Zucchini & Corn Patty
- Combine shredded zucchini, corn, green onions, chickpea flour, garlic, cumin, oregano, thyme, salt & pepper in a bowl.
- Stir together until well combined for 5 minutes.
Warm a large non-stick pan over medium heat.
Grease with oil then scoop out 1/4 cup of the zucchini mixture at a time into the pan.
Cook for about 5 minutes on each side.
Serve warm with black beans, salsa, nacho cashew cream.
