Ingredients of Zucchini & Corn Patty

  • 4 cups shredded zucchini
  •  cups corn kernels
  • ¾ cup chopped green onions
  • 3 garlic clovesminced
  •  cup chickpea flour
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt & pepper
  • high heat oil
  • nacho cashew cream
  • black beans, salsa and avocado

How to Make Zucchini & Corn Patty

  1. Combine shredded zucchini, corn, green onions, chickpea flour, garlic, cumin, oregano, thyme, salt & pepper in a bowl.
  2. Stir together until well combined for 5 minutes.
