A jar of ground coriander bought a year ago smells like dust while whole seeds from the same period still smell like coriander. The difference is physical, and it decides how a spice cabinet should be stocked.

Flavor lives in volatile oils

Most of what a spice contributes comes from aromatic compounds that evaporate at room temperature. They are volatile by definition, which is why a spice smells like anything at all.

Inside an intact seed or bark, those compounds sit in cell structures protected from air. Very little escapes because very little surface is exposed.

Grinding shatters that protection and turns one small object into an enormous amount of exposed surface, so evaporation that took years now takes weeks.

Oxygen degrades what does not evaporate

Alongside evaporation, the oils react with oxygen and change chemically. Fresh brightness dulls first, and some spices develop a flat or faintly stale note.

Fat-rich spices such as nutmeg and mustard can go further and turn rancid, which is a different failure from simply losing aroma.

Light and heat accelerate both processes, which is the argument against the decorative rack mounted above a stove.

What this means for buying

Buying whole and grinding in small amounts is not a purist stance; it is the only way to have a spice that still contains what you paid for.

American supermarkets sell small jars at high prices per ounce, while Indian groceries sell large bags cheaply. The large bag is only a saving if the spice is whole.

Where a powder is unavoidable, buying the smallest package that will be used within a few months beats buying the economical size.

Storage that actually helps

Airtight containers in a dark cupboard away from the range address the three variables that matter: air, light and heat.

Refrigeration is generally unhelpful for spices, since opening a cold jar in a warm kitchen condenses moisture inside it and moisture invites clumping and mold.

Whole spices bought in bulk can be frozen in sealed bags, with a portion kept at room temperature so the main supply is not opened repeatedly.

Toasting restores aroma but not content

Warming whole spices in a dry pan before grinding drives aromatic compounds toward the surface and creates new ones through browning reactions.

Applied to an old ground spice, gentle toasting can revive some perceived aroma, though it cannot replace compounds that already left the jar.

The reliable test is nose rather than date: crush a pinch between your fingers, and if it does not announce itself, no amount of it in the pan will.
