Cooks following an Indian recipe in an American kitchen often find that steps take longer than written or scorch faster than expected. The equipment, not the recipe, is usually the variable.
Burner output and pan shape do not match
Many Indian dishes are written around a concentrated flame under a curved pan, which puts intense heat on a small area and lets the cook move food up the sides.
A typical US range spreads a wider, flatter flame or an electric element under a flat-bottomed pan. Heat arrives evenly across the base with no cooler zone to retreat to.
The practical effect is that fast, high-heat steps become harder to control while slow, even steps become easier. The recipe's timings assume the opposite balance.
Electric and induction elements lag
A gas flame responds instantly to the knob, which is what tempering spices depends on. Coil and smooth-top electric elements hold their heat and keep cooking after being turned down.
That lag is why spices burn during a tempering step that the recipe describes as brief. The pan is still climbing in temperature when the recipe expects it to be falling.
The workaround is physical rather than electrical: lift the pan off the element, or keep a cold burner ready to move it to.
Pan mass changes the same instruction
Heavy cast iron and thick stainless hold energy and level out an uneven burner, which suits long simmering and browning onions without scorching.
Thin pans respond quickly and suit fast tempering, but they develop hot spots over a wide element and will burn a spice mix in seconds.
Most Indian recipes silently assume a fairly thin, responsive pan for tempering and something heavier for the main cooking, which is why one pan rarely does the whole dish well.
Ventilation shapes how hard you can push
High-heat frying of chilies and mustard seeds produces sharp airborne compounds. Many American kitchens have recirculating hoods that filter grease but do not vent outdoors.
Cooks then instinctively lower the heat to limit smoke, which quietly removes the intensity the technique depends on.
Opening a window, running the hood on high before starting, or moving a hard tempering step to an outdoor burner all preserve the technique instead of diluting it.
Adjusting the recipe rather than fighting it
Longer, lower browning of onions gives similar depth to fast high-heat browning and is far more forgiving on an electric range.
Tempering is better done in a small heavy pan preheated briefly, with all spices measured out beforehand, since the whole sequence is over in less time than it takes to open a jar.
Read the recipe for what each step is trying to achieve, then hit that outcome with the stove you own. The visual and aromatic cues survive the equipment change even when the timings do not.
