Quinoa: It is a flowering plant in the amaranth family. It is a herbaceous annual plant grown as a crop primarily for its edible seeds; the seeds are rich in protein, dietary fiber, B vitamins, and dietary minerals in amounts greater than in many grains.
To make this quinoa upma is ridiculously simple using. It’s a one pot meal and doesn’t require much prep time or ingredients.

Ingredients of Quinoa Upma
- 1 cup uncooked quinoa
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 1 green chili chopped

- 10 curry leaves fresh
- 1/2 cup chopped red onion
- 2 Tbsp chopped cashews
- 1/2 inch ginger
- 1/2 cup chopped carrots
- 1/2 cup peas fresh
- salt
- 2 cups water
- cilantro and lemon juice for garnish
How to Make Quinoa Upma

Wash the quinoa several times.

Add oil in a pan and heat at medium.

Add mustard seeds and urad dal.

Add chili, asafeotida and curry leaves.

Add onions and cashews and cook for 5 minutes.

Add ginger, carrots, and cook for 5 minutes.

Add quinoa and roast all the veggies.

Add salt, water, peas, cover and bring to a boil.

Reduce heat to low-medium, cover and cook for 20 minutes.

Garnish with cilantro and generous lemon juice.

Serve as a side, or as breakfast with hot masala chai.
