  • Heat oil in a skillet over medium-high heat. Add chicken to pan and saute until warmed through, about 3-4 minutes.

    2 teaspoons olive oil, 16 ounces pre-cooked chicken

  • Cook rice according to package instructions then divide between 4 bowls. Top each with equal parts chicken, black bean corn salsa and mashed avocado. Enjoy!

    2 cups lentil quinoa rice mix, 1/2 cup avocado, 1 cup black bean corn salad
