Parantha Broccoli is a unique recipe made with the goodness of broccoli, oatmeal, multi-grain flour and a blend of spices. Serve with a delicious onion relish and curd.
Ingredients for multigrain broccoli parantha with curd and onion relish
- 150 grams of multi-grain flour
- 40 grams of oatmeal
- 35 grams of quinoa flour
- 30 ml of oil
- 60 ml of water
- 60 ml of milk
- to taste Salt
- 250 grams of grated broccoli
- 100 grams of boiled potatoes
- 1 teaspoon chopped green peppers
- 1 tbsp ginger garlic paste
- 1 teaspoon of roasted cumin powder
- to taste Salt
- 1 teaspoon of Garam Masala
- 2 tablespoons of chopped coriander leaves
- 1/4 teaspoon Carrom seeds
For the onion and chili relish
- 1 large onion, thinly sliced
- 1 green pepper, sliced
- 1 teaspoon of lime juice
- to taste Salt
- 1/2 teaspoon of Chaat masala
How to make multigrain broccoli parantha with curd and onion relish
1. In a large bowl, take the multi-grain flour, add the oatmeal, quinoa flour, oil and mix well. Then add the water and milk and knead well to obtain a soft dough. Keep it aside for 20 minutes.
2. Meanwhile, grate the broccoli and add mashed boiled potatoes to it. Add the chopped green peppers, ginger garlic paste, roasted cumin powder, salt to taste, garam masala, chopped cilantro leaves and carrom seeds. Mix well.
3. Now divide the dough into 6 and stuff it with the prepared stuffing and close it properly.
4. Roll it up in 7 inches and bake on a hotplate. Apply butter on both sides and cook until golden brown on both sides.
5. To make chilli onion relish, take chopped onions and add lime juice, sliced green peppers, salt, cat masala and mix well.
6. Serve hot with sour milk, pickles and chili onion relish.
