Mouth Watering Baked Vegetarian Taquitos

  1. Dice the onion, bell pepper, and candy potato. Mince the jalapeno. Zest the lime. Rough chop the cilantro.
  2. Toss the onion, bell pepper, and candy potato with 2 tbsp of veg oil. Spread out the veg flippantly on a sheet pan, and roast till the candy potato is tender for 20 min.
  3. Drain and rinse the can of black beans. Heat 2 tbsp of oil in a massive pan over medium heat. Once the oil is hot, upload the sofrito, jalapeno, and black beans. Stir for some minutes.
