This home made Thai Massaman Curry is a wholesome variant of the conventional Thai dish. This a mouth watering meal that the complete own circle of relatives will enjoy.
Ingredients
- 600g stewing red meat including shank or brisket reduce into cubes
- 400ml can milk
- 2-2 tablespoons olive oil
- 2 huge brown onions, sliced
- 1 teaspoon salt
- 3 tablespoons curry paste
- 500ml red meat stock in water
- 2 cinnamon sticks
- 2 bay leaves
- 1 candy potato/ kumara , chopped
- 1 tablespoon tamarind paste or lemon juice
- 1 tablespoon fish sauce
- 1 tablespoon grated palm sugar
- 1 tablespoon roasted peanuts
- Sliced spring onions, for garnish
Instructions
- In a pan add the beef and salt till meat is browned. Add massaman curry paste and half of can of milk for five mins on low warmth. Add stock, final evaporated milk, cinnamon sticks and bay leaves for 1 hour.
- Add kumara, tamarind, fish sauce, and palm sugar until meat and kumara is tender. Add a bit water if needed. Garnish with peanuts and spring onions, and serve with rice.
Massaman Curry Paste
Ingredients
- 1-1 teaspoon coriander seeds
- 1-1 teaspoons cumin seeds
- 1/2- 1/2- 1/2 teaspoon cardamon seeds, cinnamon, cloves
- 2 sticks lemongrass ,finely sliced
- 6 cloves garlic, peeled and chopped
- 1 huge onion, peeled and chopped
- 2-2 cm piece ginger, peeled and chopped
- 1 tbsp shrimp paste
- 10 dried chillies, soaked in heat water
Ingredients
- Combine all spices coriander, cumin, cinnamon, cardamon, cloves in a frying pan and stir over medium warmth until aromatic.
