Gluten Free Christmas Cake Ingredients
- 300g Christmas dry fruits (pre-soaked)
- 1/2 orange zest
- 1/2 lemon zest
- 200 ml jaggery syrup
- 150 almond flour
- 100 apples, grated
- 175 butter (softened)
- 4 medium eggs

How to make a gluten-free Christmas cake
1. Preheat the oven to 140 degrees.
2. Place the rest of the ingredients except the almond flour in a large bowl.
3. Beat with an electric hand mixer until well combined. Incorporate the almond flour well.
4. Grease a 23 cm deep round pan or a 20 cm square pan with butter, line with a double layer of baking paper and grease the paper. Pour the mixture into the prepared pan.
5. Level the top and cover with a baking paper disc.
6. Bake for about 2 hours until the dough is firm to the touch and a skewer pushed in the middle comes out clean. Let the cake cool in the pan.
7. When the cake has cooled, remove the baking paper disc; pierce the top in several places with a skewer, then pour over a little cognac. Remove the cake from the pan but keep it in the baking paper.
8. Wrap with more parchment paper, then wrap in foil. Then store in a cool place to ripen.
9. Decorate the cake with candied fruit, marzipan or ready-to-use icing.
