Floating Island-Kattala Soup Ingredients
- 150 g sweet potato (Kattala)
- 75 grams of Russet potato
- 15 grams of onion (chopped)
- 10 grams of celery (chopped)
- 5 grams of pandan leaves
- 4-5 curry leaves
- 3 grams of curry powder
- 75 ml coconut milk
- 100 ml of Fresh Young Coconut Water
- 2 grams of salt
- 30 ml of coconut oil (for sautéing)
- 200 ml of vegetable broth
For the floating island
- 50 grams of sweet potato
- 50 grams of Russet potato
- 3 grams of curry powder
- 10 grams of butter
- 5 grams of salt
- 15 ml coconut milk
How to Make a Floating Island-Kattala Soup
For the Kattala soup
1. Peel the two potatoes, dice them 2 to 3 inches, heat the coconut oil and sauté the curry leaves, chopped onion, celery and pandan leaves, add the potatoes and sauté well.
2. Add the curry powder, mix well and sauté for 2-3 minutes.
3. Now add the coconut water and vegetable broth and boil for 15-20 minutes.
4. Once the potatoes are tender, mix them to get a smooth texture, pass them through a colander.
5. Adding a little more broth, boil for 5 minutes, add coconut milk and seasoning.
For the floating island
1. While you are boiling the potatoes for soup, remove 50 grams of them when they are 80% cooked and mash them.
2. Heat a pan and add the butter, add the mashed potatoes and season.
3. Add coconut milk to make it even.
4. With the help of a pastry bag, place it on a soup bowl like the Island shapes.
5. Pour the hot Kattala soup near the small curry potato island, serve hot.
