Asinan are Indonesian pickled salad. The call comes from the phrase asin, which means “salty”. This salad of asinan, referred to as betawi, is made with quite a few greens tossed in a sweet, salty, and highly spiced dressing.
Ingredients
- 3 cups cabbage, shredded
- 1/2 cup alfalfa sprouts, rinsed
- 2 cups cucumber, sliced
- 2 carrots, reduce into matchsticks
- 4 lettuce leaves, shredded
- 1/2 cup tofu, cubed
- 2 cloves garlic, sliced
- 3 sparkling crimson chilies, seeded and thinly sliced
- ½ cup roasted peanuts
- 3 tbs coconut sugar
- 1 tbs tamarind concentrate
- 1 tsp cayenne pepper
- 1 cup vegetable stock
- Sea salt to taste
Instructions
