okay so last christmas i ate so many cookies i actually gained 12 pounds in two weeks and my mom side-eyed me so hard i felt it in my soul. decided 2025 was gonna be different (lmao it’s november and i’m barely hanging on). first month of low calorie meal prep i was miserable, everything tasted like wet cardboard and i cried into a bag of baby carrots more than once. but then i stopped trying to be that pinterest girl and started making easy low cal meals that actually taste like food and?? suddenly i don’t hate my life.

i do everything after midnight because that’s when my adhd brain decides it’s go time, don’t @ me.
here’s what’s in my fridge right now (don’t judge the portions i eyeball everything):
- zoodle chicken thing with way too much garlic (like 340 cal?? idk)
- overnight oats that i forgot in the fridge for three days once and still ate (290 cal)
- those egg white muffin cup things everyone on tiktok makes (80 cal each i think)
- mason jar salads because i’m basic but make it depressed
the time i almost set my kitchen on fire trying to be healthy
week six i decided to roast a whole tray of cauliflower to make “cauliflower rice” and forgot about it while doomscrolling tiktok. came back to black bricks and smoke everywhere. my smoke alarm is still mad at me. ate chipotle for dinner that night and didn’t even feel bad.

- buy the pre-cut veggies or you’ll never do it
- hot sauce fixes everything (zero cal king)
- if it tastes bad just drown it in lime juice and pretend it’s gourmet
- sometimes i add a spoon of peanut butter to my oats and lie to my fitness tracker about it

anyway these easy low cal meals aren’t cute but they work and i’ve lost like 28 pounds so?? guess i’ll keep spiralizing zucchini at 3am like a psycho.
